Many of us have a lot going on in our lives.  We are on the go 24/7, working 40 hours (or more) each week, have families/pets, and hobbies that we enjoy.  So how can you find time to prepare amazing, healthy meals?  Honestly, some of us can’t.  And when we can’t find the time we settle for processed, unhealthy, “instant” meals- and we pay for it later through weight gain, irritability, and even debilitating diseases.

Luckily there is a solution to this problem.  There is one piece of equipment that will provide you with hundreds of gourmet style meals and preparation will rarely take longer than 5-10 minutes.  From Italian dishes, to Mexican, Asian inspired, and anything else you can think of.  This magical meal preparer is none other than The Slow Cooker.  If you don’t have one of these now, run, don’t walk to the nearest store and purchase one. 

Slow Cookers will allow you to consume healthy meals of your choice by simply placing ingredients into a dish and setting the cooker’s timer.  After a long, 8-hour day at the office you can come home to a warm, ready-to-eat, healthy dinner.  What’s not to love?

    We enjoy soups and stew in a slow cooker this time of year. It’s great to go home and dinner is ready.

    One of our favorite recipes is the Thai-peanut chicken posted here in April. We have made a change though to take out more sodium…we just leave the chicken broth out. Seriously I could it eat it every week! In fact it is in the slow cooker tonight. I love it over quinoa. It is even great the next day on salad.


    Our other favorite it lime chicken. Again because recipes are guideline to me I leave out the corn and salsa. But is is good either way! We use this chicken a lot for salads then add all the veggies we want!

    It’s finally fall and I am obsessed with soups. I love to throw in a couple chicken breasts with some italian seasoning rubbed all over them (fresh thyme and rosemary is best), 1 medium onion diced, 3 carrots diced, 2 celery stalk diced, 1 garlic clove minced and a box of low sodium stalk. Cook on low 5-7 hours (but it will still be great even if it goes 9 because that is my typical day). When I get home I’ll cook off noodles of preference and throw them in. Delish.
