Apple and Bacon Brussels Sprouts

January 19, 2018

I wasn’t always a fan of Brussels sprouts. Until, that is, I began to pair them with sweet and salty add-ins. That was a game changer for me!
Adding the sweetness of an apple with the saltiness of bacon makes the roasted brussels sprouts delicious!
I love this side dish for two reasons – it’s  fast and it compliments any main dish.

1 lb Brussels sprouts, cut in half
2 tsp olive oil
1 medium sweet apple, diced
3 slices nitrate-free & sugar-free bacon, chopped
1 Tblsp fresh rosemary, chopped
Salt and pepper to season

In a baking sheet, place brussels sprouts in a singer layer and drizzle with olive oil and season with salt and pepper. Bake for 20 minutes.
In a car iron skillet, cook your bacon pieces until crispy. Remove from pan and let soak on paper towels. Drain most of the bacon grease from pan.
Add chopped apple and rosemary and cook until apple has softened. Add bacon back into pan and roasted brussels sprouts. Toss to combine.
