Avocado Toast in 5 Minutes or Less

I don’t know about you, but any day that begins with avocado toast is bound to be a good one!! Which is why, we had to share this simple, delicious, ready in 5 minutes or less recipe.

To begin, simply toast your bread, we chose a fresh sour dough, but any artisan bread from your a local bakery will do!

While bread is toasting, chop up your herbs, cut tomatoes in half, and prepare your ricotta mixture in a small bowl. Set aside.

Next drizzle a bit of olive oil over your toast & then assemble by layering with sliced avocado, ricotta mixture, & tomatoes.

Sprinkle with salt & pepper, garnish with any left over herbs & Wah-lah!

Avocado Toast in 5 Minutes or Less

Ingredients:

  • 6 slices artisan bread
  • 1 tbsp olive oil
  • 1 large ripe avocado, (halved, seeded, peeled, and thinly sliced)
  • 1 cup ricotta cheese
  • 1/4 cup finely chopped spinach leaves
  • 1 tbsp finely chopped basil leaves
  • 2 tbsp finely chopped chives, (divided)
  • 1 cup cherry tomatoes
  • salt & pepper, (to taste)

Directions:

  1. Toast bread until golden brown.
  2. While bread is toasting, combine ricotta cheese, spinach, basil, chives in a small mixing bowl. Stir to combine thoroughly. Set aside.
  3. Cut cherry tomatoes in half. Season with salt and pepper. Set aside.
  4. Drizzle or brush top sides of toast with olive oil.
  5. Assemble toasts by layering each piece of toast with sliced avocado, ricotta mixture, and sliced tomatoes. Sprinkle with salt and pepper and garnish with any remaining snipped chives and chopped basil.
