Balsamic Chicken Mushroom Skewers

Now that grilling season is just around the corner, we thought we would share one of our favorite and easiest recipes for skewers- Balsamic Chicken Mushroom Skewers.

The chicken is marinated for 30 minutes to ensure those balsamic flavors soak in & let me tell ya, it’s oh so worth the wait! This aged balsamic is a must have from We Olive. Sweet & tangy, the flavor it adds to these skewers is simply irresistible.

Though these are yummiest when grilled, you can also cook them on a grill pan if you’d like or even pop them in a preheated oven!

Balsamic Chicken Mushroom Skewers

Ingredients:

  • 2 pounds boneless/skinless chicken breasts, (cut into bite-sized pieces)
  • 2 pounds mushrooms, (sliced 1/4″ thick)
  • 2 tbsp Traditional Aged Balsamic (*linked above)
  • 1 tbsp soy sauce ((or tamarai))
  • 3 cloves garlic, (chopped)
  • 1/2 tsp thyme, (chopped)
  • salt & pepper (to taste)

Directions:

  1. Marinate the chicken & mushrooms in the mixture of the remaining ingredients for 30 minutes.
  2. Skewer the chicken & mushrooms and grill over medium-high heat until just tender and slightly charred, about 2-3 minutes per side.
