Banana Protein Muffins

Love Banana Bread but looking for something a little healthier? These protein-packed muffins will help give you energy for that late afternoon snack and hold you over until your next meal. These are family approved for a delicious snack.


3 small to medium ripe bananas (1 cup mashed)
3 eggs
1 teaspoon vanilla
1 3/4 cup almond flour
1 teaspoon baking soda
1/2 teaspoon baking powder
Pinch of salt
1/2 teaspoon cinnamon

1/3 cup almond butter (or other nut butter)


Preheat the oven to 350o. Grease muffin tin with oil or insert muffin liners into a 12-cup pan. In a large mixing bowl, mash bananas until there are no large chunks. Add eggs, honey, and vanilla; whisk until well combined. Stir in almond flour, baking soda, baking powder, salt, cinnamon, and protein powder using a baking spatula, being careful not to overmix. Add almond butter, folding it lightly into the batter. Divide the batter between the 12 muffin cups, filling 3/4 full. Bake for 25 to 30 minutes or until golden brown and inserted toothpick comes out clean. Remove muffins from the oven and let cool for 20 minutes. Enjoy!
