Bison Pappardelle Pasta

2 tbsp olive oil
3 eschalots
2 cloves garlic
1 small jar anchovies
2 bay Leaves
1 spring rosemary
16 oz bison
1/2 cup red wine vinegar
1 28oz can diced tomatoes
parpadella pasta
parmesan cheese


  1. Heat oil in a large, frying pan on medium
  2. Sauté eschalots and garlic 1-2 minutes, until softened. Add anchovies, bay leaves and rosemary; cook, stirring 1-2 minutes
  3. Increase heat to high. Brown bison for 5-6 minutes
  4. Add wine; simmer 2 minutes. Add tomatoes and bring to boil. Reduce heat to medium, simmer 25-30 minutes
  5. Cook pasta following package instruction
  6. Add sauce to pasta, tossing to coat
  7. Serve and top with parmesan
