Blueberry Banana Breakfast Cookies

Never thought you would consider having cookies for breakfast? Well think again, we have developed the perfect breakfast cookie, which is nutritious, filling and delicious!

2 ripe bananas, mashed
2 1/2 c quick cooking oats
1 c any nut butter
1/3 c raw honey
1 tsp vanilla
1 tsp cinnamon
1 c dried or frozen blueberries or cranberries or a combination of either
Directions:
Preheat oven to 325°
Line a baking sheet with parchment paper.
Mash banana in small bowl
Add all ingredients to a large bowl and mix (I used my stand mixer for quick and easy mixing).
Scoop out about 1/4 c mounds of dough (I use my ice cream scooper!) and place on baking sheet, 6 cookies at a time.
Press mounds down to flatten into cookie shape.
Bake 18-22 minutes until lightly browned.
Remove from oven and let chill for 5 minutes before placing on wire rack to cool completely.
