We can’t stop thinking about these. These broccoli potato tots need to make their way onto your table. This recipe is quick and simple and comes together in a few minutes flat.
Here’s what you need:
5 c broccoli florets (about 2 medium)
1 med potato (any potato will work), peeled and chopped into large chunks
1 large egg
1/3 c parmesan
1/2 c almond meal/flour
2 tbsp fresh parsley, chopped
1/4 c onion, finely diced
1/4 tsp garlic
1/4 tsp sea salt
1/8 tsp black pepper

Preheat oven to 400°
Add broccoli and potato chunks in steamer basket and steam until tender – 8-10 minutes.
Place into food processor and pulse until finely diced.
In a large mixing bowl, add 2 cups broccoli, 1 cup potato and rest of ingredients. Mix thoroughly.
Scoop 1.5 Tblsp of mixture and gently press between your hands to form a ball. With tort fingers, gently pinch ends together to form into a tater-tot shape.
Place on a parchment paper covered baking sheet.
Bake until golden brown and crispy – 18-25 minutes. (Although not necessary, you can turn halfway through baking time so both sides of toy get browned)
