We love breakfast sandwiches on the weekends because they make for an easy and fast meal.
We have differing taste buds in this family and these sandwiches can be made to please anyone, including the low-carb option of no- bread bun.
The trick to getting the perfectly round egg “bun” is to use the lid ring of a wide mouthed main jar in the pan – easy!

1 large, thin slice of pepperoni*
1 Tblsp guacamole
1 Tblsp low fat cheese (optional)
Heat a non stick pan over medium heat and place 2 mason jar lid rings, that have been lightly sprayed with cooking spray, in pan.
Gently break an egg into each ring. You can stir the egg to break up the egg or leave as is. Pour a couple of tablespoons of water in pan, cover and cook on low heat for 3-4 minutes or until egg is just set. Remove lid and top with cheese if desired, until cheese is slightly melted – about 1 minute.
With a spatula, remove eggs on to a plate and gently remove rings.
Top one egg with guacamole, pepperoni and other cooked egg.
