Butternut Squash and Pine Nut Tortellini

This dish is packed with so many hearty flavors. I serve it at Holiday Parties all the time and there’s never any left because everyone loves it! It’s beautiful to display with all the colors and fresh ingredients. It can be a main course or served as a nice accent side dish.

Ingredients

Tortellini

1 cup Butternut Squash diced cubes

Olive Oil

Sea Salt

1 Yellow Onion

1 Bunch Swiss Chard (deveined and cut into ½ inch ribbons)

¼ cup Parmesan Cheese

½ cup Pine Nuts

¼ Chives

Zest of 1 Lemon

Optional- garlic

Directions

Peel the butternut squash and cut into small, diced cubes. Saute the butternut squash cubes in a pan with olive oil (option to add garlic here) and sea salt. Dice the yellow onion and add to butternut squash. Cook the Tortellini. While the butternut squash/onion mixture and tortellini are cooking, cut the swiss chard into 1/2 strips, cutting out the larger veins. To get the zest of one lemon, use a fine grater and grate the yellow rind off of the lemon and that’s your zest!

Once the butternut squash/onion mixture is cooked through, add the swiss chard for the last couple minutes so that it becomes wilty.

Place the tortellini and butternut squash mixture together in a bowl. Add the pine nuts, chives, and lemon zest. Drizzle olive oil and add the parmesan cheese. Serve immediately.

(***I have also made this recipe switching out the Tortellini for Ravioli and the Pine Nuts for Hazelnuts. So you could try that as a fun variation of this dish.)
