Caprese Salad with a Twist

This is one of my favorite salads! It’s easy to throw together and it’s jam-packed with favor. The special ingredient in this twist-on-a-caprese-salad is the arugula! If you haven’t tried this little leafy gem before, it has a peppery flavor with nuances of nuts and mustard. It gives just the right amount of bold flavor to enhance this delicious salad.

Baby Spring Mix or Lettuce


Garbanzo Beans (chick peas)



Buffalo Mozzarella


Creamy Balsamic Dressing

Just toss all the ingredients together and add dressing. I have also done this recipe without the dressing and instead drizzled balsamic vinegar and olive oil over the salad. It’s also fun to try it with a specialty olive oil—like jalapeno infused olive oil for a little spice.

I have made this salad a zillion times and I still get requests for it all the time! If you’re already an arugula lover then this will be right up your alley.
