Coconut Chicken

Coconut Chicken, crispy, flavorful, and simple coconut using convenient pantry ingredients to make one amazing and healthy meal everyone will love!

1.5 lbs boneless chicken breast
1 c unsweetened shredded coconut flakes (sweetened works as well if that’s all you have)
3/4 c breadcrumbs
1/2 flour (whole wheat or gluten-free works)
1 tsp salt
1/2 tsp pepper
2 large eggs
2-3 Tbls. avocado oil

Preheat oven to 400°
Line a baking sheet with parchment paper.
Pound chicken breast to flatten about 1/4-1/2″ thickness and cut into strips.
Pulse shredded coconut in food processor to break into crumb consistency.
In a medium bowl, mix coconut and breadcrumbs.
In another bowl, mix flour, salt and pepper.
In a third bowl, whisk eggs together.
Heat oil in skillet over medium heat.
Coat each strip in flour mixture, then in egg mixture (make sure to allow excess egg to drip off), then in coconut mixture; shaking off any excess.
Fry 4-6 pieces at a time 1-2 minutes per side and place on prepared baking sheet.
Bake for 6-8 minutes or until cooked through.
