Crab Cake Waffles

Dust off that waffle machine to make these fast and delicious Waffled Crab Cakes! This is so genius you’re going to wonder why you haven’t thought of this sooner. Your waffle iron is incredibly versatile! It takes just a bit of creativity to take full advantage of the possibilities!

9-12 ounces real crab meat, shells removed (canned crab meat works great!)
1/2 c French fried onions, crumbled (you can also use panko crumbs)
1 large egg, beaten
1 large egg white
1 tblsp light mayonnaise
1 tsp Dijon mustard
2 tblsp minced fresh parsley
1 2tblsp fresh lemon juice
1/2 tsp Old Bay Seasoning
1/8 tsp smoked paprika
Few dashes Tabasco, optional
1/8 tsp kosher salt
Black pepper to taste
Cooking spray
Instructions
Preheat waffle iron on high heat.
Add all ingredients in a bowl and mix gently, but do not over mix.
Scoop out a 1/2 c of the mixture (I use a measuring scoop) and drop on to waffle iron. Cook until nicely browned – about 2-3 minutes.
Serve over a bed of lettuce that has been mixed with your favorite dressing (I love Bolthouse brand – they have lots of great flavors and good ingredients for the health conscious!). Drizzle with extra lemon juice!
*You can also use leftover or canned chicken or salmon that is shredded.

    Has anybody made this yet? If yes, how was it? I really want to try this, but am a little weary to make it just because crab meat is so expensive.
