Crispy Shredded Carrots

Such a versatile vegetable! This can be added to or topped on any food, or delicious all on its own!
You can add your favorite seasonings to the carrots and also add shredded parmesan to the mix prior to baking for an even greater flavor!

1 Tblsp Avocado oil (any other oil can be used to suit your needs)
16 oz. bag shredded carrots
Choice of seasoning (I used sea salt, garlic powder, smoked paprika)
Oprional: shredded parmesan
Preheat oven to 400°
In a medium bowl, mix all ingredients together until carrots are thoroughly coated.
Spread carrots evenly on a baking sheet.
Bake for 20 minutes or until crispy.
Optional:  you can broil the carrots for 1 minute to attain the level of crispness that you desire (watch carrots carefully so they don’t burn under the broiler!).
Meal prep tip:
I like to triple this recipe so I have enough for the rest of the week.
