Cucumber Avocado Tuna Boats

This is one of my favorite lunches. It’s simple, quick and healthy too!

Here’s what you’ll need: CLICK HERE for printable recipe card

1 large can Tuna (in water) I prefer albacore

1/2 ripe avocado

The juice of half a lime

1 big green onion minced (keep some of the green part aside)

1/2 tsp. garlic powder

1 tsp ground paprika

1 Tbls of extra-virgin olive oil (I used lemon infused olive oil)

1/4 cup olive oil mayo *optional

Sea salt and freshly ground black pepper to taste

Cut cucumber in quarters, like boats, scrape the seeds out. Add the tuna, avocado, lime, salt, garlic powder, green onion, olive oil and mayo to a medium bowl. Mash up the contents. Fill the boats with the avocado mixture. Top with left over green onion, if desired. That’s it! Enjoy!
