SWEET POTATO HASH EGG CUPS

Sweet potato makes a nest to hold your egg for an easy on the go breakfast and weekly prep.

INGREDIENTS

3 cups grated or spiralized sweet potatoes

1 tsp paprika

½ tsp thyme

Salt and pepper to taste

12 eggs

½ tsp garlic powder

DIRECTIONS

  1. Preheat oven to 375 degrees
  2. In a large bowl toss sweet potatoes, paprika, thyme, salt, and pepper with your hands.
  3. Coat muffin pan with cooking spray.
  4. Fill each muffin cup with potatoes and press down.
  5. Bake for 10 minutes. Then remove from oven.
  6. Crack an egg in each sweet potato cup.  Sprinkle with garlic powder.
  7. Return to oven and bake for 10 minutes for runny yolk and 13 minutes for more set yolk.
  8. Use a spoon to gently go around the edges and remove egg cups.
