This soup recipe is a classic comfort food, but ingredients were chosen for a healthier and satisfying variety.
I like to double the recipe for leftovers to have for cold winter lunches.
Getting extra lean ground beef makes this lower in fat, but you could use ground turkey or even ground chicken!
Ingredients: CLICK HERE to download printable recipe card.
2 cloves garlic, minced
1/2 yellow onion, diced
5 carrots, diced
2 lbs. extra lean ground beef
1 medium sweet potato, any variety, cubed
2 med tomatoes, diced
4 c broth, any variety
6 oz. tomato paste
1 Tblsp dried parsley
1 Tblsp paprika
Salt and pepper to taste
Spray soup pot with cooking spray and heat over medium heat. Cook garlic and onion until translucent. Add ground beef and brown.
Add carrots and sweet potato and cook an additional 5 minutes.
Cover with tomatoes, broth and tomato paste.
Reduce heat to medium-low and sir in parsley and paprika.
Simmer 30 minutes, or until vegetables are cooked through.
Season with salt and pepper.

That is comfort food for these cold winter nights. I am going to try it.

I followed the quantities prescribed above which did indeed yield quite a bit, enough for a week for one person. The end consistency is rather like chili than soup, so if soup is desired, add more broth and perhaps actual tomatoes instead of the paste.
I used chorizo beef which made this spicy and a good compliment to the sweet potato.

I tried it but also added a can of mixed beans for the texture.
