Healthy, delicious and all in one skillet. whats not to love!? This recipe would make a delicious breakfast, brunch or dinner any night of the week. You could wrap it all up in a homemade flour or corn tortilla for a meal on the go. Either way you serve it, it’s sure to be a hit!

1 package chicken and Apple sausage links
2 c Japanese purple sweet potatoes (any potato will work), diced
1 green bell pepper, diced
1 8oz. container cherry tomatoes
Salt and pepper to taste
Preheat oven to 400°.
Spray a cast iron skillet (or any oven proof pan) with coming spray and heat over medium heat.
Add chicken apple sausage and potatoes and sautè covered until tender; add salt and pepper to taste and stir occasionally.
If sausage is browning too much, adjust heat and stir.
Add green bell peppers and cook for another 2-3 minutes or until tender.
Remove from heat and add tomatoes and stir until mixture is combined.
Create “pockets” in mixture for eggs and crack each egg into a pocket. Sprinkle with salt and pepper if desired, or any other seasoning.
Place skillet in oven and bake until eggs are cooked to preference – 10-15 minutes for soft cooked yolks.
