Healthy Sandwiches On The Go

Happy Monday, everyone!

I’m currently in my yoga teacher training and I have to find some creative ways to make quick meals on the go. When I take a lunch break my body needs something fresh, filling, and healthy but I’m usually limited on time. Eating fresh vegetables is hard when you’re not at home because you have to spend time preparing them. One of my favorite things to do is to cut up a bunch of vegetables the night before a busy day and separate everything into plastic bags or a container. That way everything is washed, cut up, and ready to put on my sandwich. Try out this combination of vegetables for your next sandwich on the go so that you don’t have to turn to fast food or find yourself late to your 1:00 meeting.

1 small tomato
1 cucumber
1 handful of baby spinach
1 avocado
2 slices of Daves Killer Bread (I use the “21 Whole Grains and Seeds”)

I like to toast my bread just a little bit before spreading the hummus on each slice. Then put your spinach, avocado, cucumbers, and tomatoes on. You can also add peppers, sprouts, or any other ingredients that you love. Have fun with this so that you can look forward to your meals and stay on track with healthy eating!     These are great ingredients. I like to make it into a wrap with some gouldens spicy mustard.
