Homemade Granola

Homemade Granola
1/4 & 1/8 cup of honey
1/2 teaspoon of vanilla extract
1/2 teaspoon of cinnamon
1 1/2 cups of oats
1/4 cups of raw quinoa (rinse & soak well first)
3/4 cup of silvered almonds
1/4 cup of ground flaxseed
1/4 cup of pumpkin seeds
1 tablespoon of sesame seeds
1/4 cup of coconut flakes
1 cup of dried fruit (I like to use cranberries or apricots)

Mix the honey, oil, vanilla, and cinnamon into a microwavable boil. Microwave it for a minute and then stir it all together.

Put the rest of your ingredients into a large mixing bowl. Toss it all together until the ingredients are mixed together. Whip one egg white and add it to your bowl of granola.
Put your granola on parchment paper on a cookie sheet. Bake it at 325 for 45 minutes (stir twice during that time) or until it’s toasted & nutty smelling. Your house will start to smell delicious, you’ll know when it’s ready!
I put this on my Greek yogurt for breakfast in the morning or I eat it as a snack during the day. Enjoy!
