Insanely Delicious Sweet Potato Egg Boats

I’ve discovered the sweet potato egg boat! After seeing versions float around Pinterest for a while I decided it was time to up my breakfast game. They’re super easy and if you cook the potatoes the day before it only takes a few minutes the next morning to throw everything together.

1 small sweet potato

2 eggs

salt and pepper to taste

coconut oil or real butter *optional

*toppings, salsa, scallions, bacon avocado etc.



1. Heat oven to 350°F.
2. Scrub sweet potato, prick all over with fork, place on glass baking dish, and cover with damp paper towel. Microwave on high about 8 minutes, checking halfway through, until potato is tender when pierced with skewer. Let cool slightly.
3. Remove from baking dish and slice sweet potato in half lengthwise. Scrape out center, leaving ½” border around skin intact, and season with salt and pepper.
4. Crack egg inside. Season egg with salt and pepper, place on foil lined baking sheet and bake about 20 minutes until white is set.

*Sprinkle with crumbled bacon, top with guacamole, avocado, scallions or salsa and queso fresco!
