Southwest Green Chilis Egg Bites

Spice up your breakfast routine with these easy, protein-packed, poppable egg bites. You can make them hot or mild.

3 Servings 2 bites


  • 4 eggs
  • 1/2 cup shredded pepper jack cheese
  • ½ cup cottage cheese
  • 4 oz canned diced green chilis


  1. Mix eggs, pepper jack cheese, cottage cheese, and green chilis together in a medium bowl. 

2. Spoon mixture into silicon instant pot egg bite pan.   Fill each spot about ¾ the way full.  Cover with foil.  

3.Place 1 Cup of water in the bottom of the instant pot.  Place trivet in instant pot then carefully lower egg bite mold onto the trivet.  Close the lid and turn the pressure knob to the sealed position.  

4. Cook on high for 10 minutes, wait 5 minutes then use quick release. 

These can be stored in the fridge and reheated in the microwave for 30 seconds.  Make a double batch and have breakfast for the week.
