Kale Salad with Roasted Butternut Squash and Goat Cheese

I LOVE salads. I can eat a hearty salad for breakfast, lunch or dinner any day of the week. They’re extremely versatile, you can add anything you want and whip up any kind of dressing.
Add a tasty, lean source of leftover protein and you go from a side dish to a full blown meal.
If you’ve never tried kale in a salad, this is the recipe to try.
The blend of buttery roasted squash, creamy goat cheese and dried blueberries, give this salad the perfect amount of flavor for your taste buds.

On a platter, pile kale, squash, cheese, blueberries and pecans.
In a small bowl, mix mustard, oil, vinegar and season with salt and pepper.
Drizzle over salad and mix to coat thoroughly.
