Low Carb Breakfast Pizza

Pizza for breakfast? Low carb??
Yes and Yes!
I love to bake and I especially love making our own pizza crust. I don’t however, always love (or need!) the high calories and/or carb content in said pizza crust, so I like to have an alternative without sacrificing flavor.
Now, a traditional pizza crust cannot be replaced by any substitute method (I’ve tried them all!), but this Cauliflower Pizza Crust from Trader Joe’s is a great alternative to when you’re wanting a lower carb option.
I love the convenience of this product and with the endless variety of topping possibilities, you have yourself a tasty, filling meal that comes together quickly!

Cauliflower pizza crust (I use Trader Joe’s brand)
1 c chopped tomatoes
1/2 c low fat cheese, shredded
4 eggs
Seasonings of choice
Directions:
Preheat oven according to package instructions and bake cauliflower crust accordingly.
Remove from oven and top crust with tomatoes, shredded cheese and season as desired.
Push aside toppings to make 4 wells for eggs and crack each egg into each well.
Bake an additional 8-10 minutes or until eggs are cooked to your liking.
