Marinated Tomatoes 

Happy Monday! I want to share a recipe with you that I make a lot in the Summer. It’s marinated tomatoes and it is always a hit when I take it as an appetizer at get togethers.

I love to garden and I always seem to have more tomatoes than I know what to do with. I hate to waste them so I make this. It’s easy to put together and can be made a day in advance. I usually eat this with triscuits. You can also lay it over chicken or salmon and add fresh arugula to it. You can take the sugar out if you’d like but I like that it makes it a bit sweeter. 
3 tablespoons of chopped parsley
1 tablespoon of sugar
1 1/2 teaspoons of garlic salt
1 1/2 teaspoons of seasoned salt
1/2 teaspoon of black pepper
3/4 teaspoon of dried thyme
3/4 cup of vegetable oil
1/2 cup of red wine vinegar 
3 green onions chopped
3 cups of baby tomatoes cut in half
Mix all of your ingredients together and let it sit in your refrigerator for 2 hours prior to eating. Enjoy!
