Miso Chicken Rice Bowl

Tired of the same old chicken. Try this week Asian inspired chicken bowl recipe.  It will have you coming back for more.

  • 2 Chicken breasts
  • 1/4 cup ginger miso-mirin sauce
  • 1 cup basmati rice
  • 6oz broccoli
  • 1/2 cup edamame
  • 3 1/2 oz cabbage and carrots
  • 1/4 cup dried Shiitake mushrooms
  • 1/2 tsp Shichimi togarashi


  1. Preheat the oven to 425o. Bring rice, 2 1/2 cups water, and 1/2 tsp salt to a boil in a small pot. Stir. Reduce heat to medium-low and cover with lid. Simmer for 16 minutes or until rice is tender and water absorbed. Remove from heat. Let rest, covered, for 3 minutes.
  2. Chop shiitake mushrooms. Place in a small bowl. Cover with water; let soak for 5 minutes or until mushrooms are softened. Once softened, strain and discard liquid.
  3. Cut broccoli into bite-size pieces.
  4. Pat chicken breasts with paper towels to dry. Season with salt and pepper. Heat 1/4 tablespoon cooking oil in a medium oven-safe saute pan, over medium-high heat. Add chicken to a hot pan and sear for 3 minutes on each side. Remove pan from heat. Add ginger miso-mirin sauce and 1/2 cup water. Stir to combine. Transfer pan to oven. Roast 10 to 12 minutes or until the chicken is fully cooked.
  5. Heat 1 1/2  tablespoons cooking oil in a large saute pan over medium heat. Add broccoli, edamame, cabbage, and carrots to the hot pan. Season with salt and pepper. Cook 7 to 8 minutes or until broccoli is fork-tender and edamame is slightly browned, stirring occasionally.
  6. Fluff rice with a fork. Add mushrooms to the pot. Season with shichimi togarashi to taste. Salt and pepper to taste. Stir to combine.
  7. Cut chicken into 5 to 7 pieces each. Divide rice with shitake between bowls. Fan miso chicken over top. Spoon any sauce from the pan over the chicken. Serve stir-fried vegetables next to the chicken. Enjoy!
