Nacho Mama's Chicken Nachos

When you want nachos, but don’t want the added carbs from chips, using mini bell peppers is a game changer! Mini bell peppers are a perfect size for eating with your hands, but loaded with chicken for a satisfying meal! This dish is versatile enough that you can use any protein source like ground turkey or extra lean ground beef!

2 c cooked chicken, shredded
2 c black beans
1/4 c warm water
2 tblsp taco seasoning
1 bag mini bell peppers, halved and deseeded
1 c low fat Cheddar cheese
Optional toppings:
Guacamole
Olives
Low fat sour cream or Greek yogurt
Preheat oven to 400°.
In a bowl, mix together chicken, black beans and water until thoroughly mixed.
Fill each mini bell pepper with chicken mixture, top with cheese and bake for 8-10 minutes or until bell peppers are slightly softened and cheese is melted.
Remove from oven and top with suggested toppings.
