Roasted Butternut Squash

Roasted Butternut Squash is in the top 3 on my list of favorite vegetables. The roasting process brings out just the right amount of sweetness and buttery flavor and it’s a no muss, no fuss recipe that can be paired with just about anything!
Costco is a great place to get pre-cut butternut squash for convenience.
I always make a big batch to have leftovers for my breakfast or lunch.

2 lbs. pre-diced butternut squash
Avocado oil (or any other favorite oil)
Seasoning of choice (I used an herbed garlic sea salt)

Directions:
Preheat oven to 400°.
In a baking sheet, spread out butternut squash.
Drizzle with some olive oil.
Season with any type of seasoning and mix (I like to use my hands so I can coat thoroughly).
Bake for 20 minutes or until tender – no need to stir!
