Although I’m an athlete, and need carbs for fuel, I carb cycle depending on what my workout days look like (higher carbs on days I have tough workouts, lower carbs on days my workouts are light or non existent!)
When I am looking to lean out a bit (like now, getting ready for summer!), I follow a carb cut and I tend to have meals and foods that are high in volume but low in carbs. This recipe is exactly that – I can eat A LOT of cauliflower without worrying about going over my carb goals for that meal. And because I get real bored with plain cauliflower, I always add a few basic ingredients to make the flavor explode!

1 head of cauliflower, sliced into discs
1-2 Tbsp avocado oil (any other oil will work)
2-3 slices Applegate* Pepperoni, diced
1/3 c low fat cheese of any variety
Seasoning of choice (a simple sea salt and garlic powder combination works great)
Preheat oven to 400°.
Lightly brush cauliflower slices with avocado oil (alternatively, you can use a cooking spray for convenience!) and sprinkle with seasoning of choice.
Bake for 10 minutes each side or until lightly browned.
Remove from oven and set oven to broil.
While oven is heating, top cauliflower with pepperoni and cheese.
Broil for 1-2 minutes or until cheese is bubbly and melted.
*Any variety of pepperoni will work; I trust Applegate to have quality ingredients.
