One dish meal using basic kitchen staples? My favorite stress-free way to cook!
Chicken thighs provide a tender, melt in your mouth result that sometimes chicken breasts simply cannot.
This can be paired with any side dish or salad.

4 chicken thighs
2 Tblsp Dijon mustard
1 Tblsp Brown sugar
1 Tblsp Apple cider vinegar
Few sprigs of thyme
3/4 c chicken broth
2-3 garlic cloves, minced
1 Tblsp olive oil
Preheat oven to 375°
Using a baking dish, mix all ingredients, except chicken thighs until thoroughly combined. Place chicken thighs in dish and drizzle with olive oil.
Bake for 60 minutes, turning after the first 20 minutes, then again after the net 20 minutes. Broil for a couple of minutes if you like a darker and crispy, browned chicken thigh.
