Roasted Delicata Squash

Rich flavor and even richer and creamier texture make this squash a must for your dinner table. Once roasted the delicata squash’s outer edges start to brown and caramelize and create an almost sweet potato like flavor. Once you try this delicious recipe you’ll instantly be a fan of the delicata squash.

1 large Delicata squash*
2 tsp avocado oil (or your favorite oil)
2 Tblsp shredded parmesan cheese
1 heaping tsp Seasoning of choice (I like Italian seasoning or a basic garlic sea salt)

Instructions:

Preheat oven to 425° and lay a piece of parchment paper on a baking sheet.
Slice squash in half horizontally and scoop out seeds.
Slice each half into 1/4-1/2″ slices; place in bowl.
Drizzle with oil, sprinkle with cheese and seasoning and mix thoroughly until all slices are evenly coated.
Spread evenly on baking sheet and bake for 25 minutes.
