Roasted Squash with Parmesan

Ahh, summer… BBQ’s, swimming pools, friends, and family. It’s a good time to cook up something delish to keep our tummies happy and healthy. I love spending my nights out on the patio with good food and good company. This roasted squash side dish can be paired with anything- pasta, steak, fish, or chicken. INGREDIENTS (serving 4)
  • 2 summer squash 
  • 2 green zucchini
  • 1 onion
  • 1/4 cup plus 2 tablespoons extra-virgin olive oil
  • 1 tablespoon coarse salt
  • Freshly ground black pepper
  • 1/2 cup grated Parmesan cheese
  • Parchment paper
  • Zest of 1 lemon


  1. Place squash, zucchini, and onion on a cutting board. Slice the squash and zucchini and dice the onion.
  2. Transfer squash, zucchini, and onion to a large bowl. Add 1/4 cup olive oil, salt, and 1 teaspoon black pepper; toss to combine. Add Parmesan and toss until squash and zucchini are well coated.

  3. Preheat oven to 425 degrees.

  4. Spread squash and zucchini pieces evenly on prepared pan. Transfer to oven and roast until tender and lightly caramelized, about 12 minutes.

  5. Sprinkle zest of lemon over squash.
