Sausage and Sweet Potato

Combine simple ingredients into one pot for a complete meal that doesn’t require extra work.

1lb sausage of choice
1 medium onion, chopped
2 cloves garlic, finely chopped
1 bell pepper, chopped
1 lb Brussels sprouts, quartered
1 sweet potato, peeled and cut into small cubes
2 2tblsp coconut aminos (soy sauce works, just reduce to 1 Tblsp)
Cooking oil of choice

Heat a skillet over med heat and sautè sausage and onion until no longer pink.
Add potato and Brussels sprouts and cook, covered, for about 15-20 minutes or until softened.
Drizzle coconut aminos and mix.

Serve immediately.
