Secret Ingredient Smoothie

I have a teenager who’s pickiness, when it comes to vegetables, requires some stealth-like cooking skills in order to get her to eat some! (can you relate?)
This smoothie is probably one of her favorites and, to this day, she has no idea what the secret ingredient is!
If she knew that I put an entire cup of cauliflower in her smoothie, she would find a reason not to like it anymore – trust me!
So any smoothie I make, the full cup of cauliflower goes in there!
Along with the vegetable, I use a whey based (from grassfed cows) protein powder containing only 5 ingredients and a healthy fat source from almond butter.
This way, I feel good knowing it’s a smoothie with a balance of nutrients.

1 c frozen cauliflower*
1 c frozen fruit (banana, blueberries and pineapple is what I used for this one)
1/2 c milk of choice
1/4 tsp vanilla
1 Tblsp unsweetened nut butter of choice
Optional add-ins:
1scoop protein powder of choice (mine was coconut flavored)
Unsweetened coconut flakes
Directions:
Add all ingredients in blender or food processor and blend until smooth.
*I purchase frozen cauliflower rice, but you can certainly do it with fresh cauliflower bits that have been frozen.
**For an even lower sugar content smoothie, you can replace the banana with yellow zucchini, squash or any other veggie.
