Slow Cooked Asparagus Sweet Potato Chicken

This Slow Cooked Asparagus Sweet Potato Chicken recipe is deliciously healthy and easy meal to make. This meal is gluten-free, paleo and perfect for your busy weeknight dinner. It’s also part of the iWork recipes that will be featured in our 2017 program.

Ingredients:

1 lb. boneless chicken breasts
1 tablespoon coconut oil
Salt and pepper
3 garlic cloves, minced
1 medium sweet potato, peeled and diced
½ cup chicken broth
1 onion
½ lb (225 g) fresh asparagus (the spears should be cut at a diagonal in 1 and 2-inch pieces)
½ teaspoon fine sea salt
½ teaspoon freshly ground black pepper
½ teaspoon red chili flakes

Instructions:

On a cutting board, cut the chicken into small pieces and season with salt and pepper.

Slice onion and sweet potato and layover chicken.

Add Coconut oil, red chili flakes, garlic, salt and pepper.

Cook on high for 4 hours.

During the last 15 minutes of cooking cut and add fresh asparagus.

The best part of this meal is the leftovers for my busy working Monday.
