Southwestern Chicken Salad

Southwestern chicken salad is delicious, fresher, and healthier than any restaurant salad at a fraction of the price.
This southwestern chicken salad is healthy, light and fresh topped with delicious dressing, it’s made with simple ingredients yet it packs an explosion of flavor and is the perfect accompaniment to this yummy salad.

6 c chopped lettuce
2-3 chicken breasts, cooked and chopped
1.5 c corn
1.5 c black beans
2 tomatoes, chopped
1/2 c red onion, chopped
1 avocado, diced
3/4 c low fat cheese
Handful chopped cilantro
DRESSING:
1/2 c plain Greek yogurt (I used non fat)
3 tblsp Olive oil
2 tsp honey
2 tsp apple cider vinegar
1tsp mixed garlic
Juice of 1 lime
2 heaping tsp taco seasoning
INSTRUCTIONS:
Add all salad ingredients in large bowl. Whisk together all dressing ingredients. Drizzle preferred amount of dressing over salad.
Toss to combine and serve cold.
Enjoy!
