Spinach Ricotta Stuffed Chicken

The warmed spinach with the ricotta creates such add a great flavor.

INGREDIENTS

2 chicken breasts

2 cups fresh spinach

¼ cup ricotta cheese

Salt and pepper to taste

4 tbsp grated cheddar cheese

Paprika

DIRECTIONS

  1. Preheat oven to 400o
  2. In a large sauté pan cook spinach with a dash of oil on medium heat until slightly wilted.
  3. Stir in the ricotta and cook for another minute. Remove from heat.
  4. Place the chicken breast on baking sheet. Cut slits into the chicken breasts about ½ inch apart.  Do not cut all the way through the chicken breast, only about ¾ of the way.
  5. Stuff the spinach and ricotta mixture into the slits
  6. Season the chickens with salt and pepper. Top with cheddar cheese and sprinkle on the paprika.
  7. Bake for 20-25 minutes until juices are clear.
