Brown-bag lunches and sandwich nights at home don’t have to be boring. Here’s a recipe for a super satisfying sandwich to kick off your June Challenge menu: great portable food, loaded with flavor, healthy but still hearty.
Make it simple by picking up a rotisserie chicken from the market, to create this Herbed Chicken Salad Sandwich in a snap. That said, if you make the chicken salad a day or so ahead, the flavors will marry nicely as the filling chills.
1 tablespoon chopped tarragon
3 tablespoons canola or olive oil mayonnaise
3 tablespoons 2% plain Greek yogurt
1 tablespoon fresh lemon juice
1/8 teaspoon kosher salt
2 cups chopped skinless, boneless rotisserie chicken breast
1/4 cup minced sweet onion
2 slices Dave’s Seed bread or Whole wheat bread
4 red leaf lettuce leaves
1 cup super greens or arugula
