Wash sweet potatoes & pat dry. *keep the skin on...A sweet potatoes skin contributes significant amounts of fiber, potassium, and quercetin.
Cut ends off & then slice into 1/2" thick pieces. You should get about 4 slices per sweet potato.
Lay slices on a baking sheet, on top of a baking rack. Spray with olive oil, then bake for 10-12 minutes. Switch oven to broil & keep an eye until slices are tender-crisp, making sure edges don't burn.
Remove sweet potatoes from oven & allow to cool completely. Store slices in the fridge until you are ready to use.
To make sweet potato toast, place a slice or two in the toaster and cook on medium until the edges are curled & crispy. Careful not to let your toast burn!
