Sweet Potato Toast

This sweet potato toast is so easy to make, you’ll wonder why you never thought of it before.

A healthy carb to boost your energy, sweet potatoes are packed full of fiber, potassium, & vitamin A.

Make it your own by adding healthy toppings like avocado, eggs, or fresh fruit…a tasty & versatile switch that will fill you up!

Sweet Potato Toast

  • 2 whole sweet potatoes
  • 1 spray olive oil
  • natural almond butter
  • 1 avocado (, sliced &/or mashed)
  • various toppings ideas: (fresh fruit, cinnamon, cracked pepper, balsamic drizzle, grape tomatoes, crushed pistachios ,etc. )
  1. Set oven to 350. 

  2. Wash sweet potatoes & pat dry. *keep the skin on…A sweet potatoes skin contributes significant amounts of fiber, potassium, and quercetin.

  3. Cut ends off & then slice into 1/2″ thick pieces. You should get about 4 slices per sweet potato. 

  4. Lay slices on a baking sheet, on top of a baking rack. Spray with olive oil, then bake for 10-12 minutes. Switch oven to broil & keep an eye until slices are tender-crisp, making sure edges don’t burn. 

  5. Remove sweet potatoes from oven & allow to cool completely. Store slices in the fridge until you are ready to use. 

  6. To make sweet potato toast, place a slice or two in the toaster and cook on medium until the edges are curled & crispy. Careful not to let your toast burn! 

  7. Top your “toast” with your desired toppings & enjoy!
