Vanilla-Cinnamon Chia Seed Pudding

Looking for a big boost of fiber and protein in your daily diet? look no further, this little ingredient packs a punch!

If you love rice pudding or tapioca, chia pudding will be right up your alley. Best of all: on busy mornings, it’s so simple to throw together, it basically makes itself. We recommend using a base of almond milk, coconut milk, or whole milk for maximum creaminess. This recipe opts for vanilla almond milk and a generous pinch of cinnamon to mimic the comforting flavors of rice pudding. For a little something extra, try topping with toasted coconut, chopped nuts, or fresh fruit.

Ingredients

  1. 2cups vanilla almond milk
  2. ½cup chia seeds
  3. 2tablespoons agave nectar
  4. 1teaspoon ground cinnamon, plus more for serving, optional
  5. ½teaspoon vanilla extract
  6. teaspoon kosher salt

Combine the almond milk, chia seeds, agave nectar, cinnamon, vanilla, and salt in a large bowl. Stir until well combined. (Make sure the chia seeds are completely coated in almond milk in order to ensure proper absorption.) Cover and refrigerate for 2 hours. Stir before serving.
