Vegetarian Spinach Wrap

This wrap is packed with ingredients that keep me full throughout the day without feeling like I ate too much. I’ve noticed that eating a heavy lunch can result in an hour or so of low energy. To avoid that I try and consume as many fresh vegetables as I can instead of pasta, bread, and other heavy carbs. I love this wrap because it’s light and easy to put together and absolutely delicious! It’s also vegetarian and works great for Meatless-Monday meals.

  1. 1 Morningstar chipotle black bean burger
  2. 1 spinach wrap
  3. Half of a red bell pepper sliced into thin strips
  4. 1 small handful of fresh sprouts
  5. Spicy red hummus
  6. Pesto spread
  7. 1 handful of fresh spinach
  8. Your choice of cheese (I use cheddar cheese)


First make sure your black bean burger is taken out of the freezer. I put mine in a Ziploc back the night before and put it in the refrigerator, that way it’s thawed by lunch time. Spread the pesto and hummus on the wrap. Then place your cheese on next. I put my spinach on top of the cheese, next I spread my sprouts, and then I add the rest of the ingredients. The black bean burger can be microwaved or cooked on the stove (follow the directions that are on the box) and put in the wrap after it’s completely cooked. Roll up the ends nice and tight so that your veggies aren’t falling out.
