Version #2 Sweet Potato Avocado Toast

We had such good feedback from our recipe for the sweet potato egg boats that we wanted to give you another version of this delicious combo of flavors. Here’s our version number #2- Sweet Potato Avocado Toast!
Here’s what you’ll need: CLICK HERE to download the recipe card.
1 medium sweet potato, sliced lengthwise into 1/4″ slices
Olive oil
Guacamole (or fresh, mashed avocado)
Preheat oven to 410°.
Line baking sheet with parchment paper.
Lightly spray or brush both sides of sweet potato with olive oil and place on baking sheet
Bake 10 minutes each side or until lightly brown and tender (oven times will vary).
Remove from oven, spread sweet potato slices with guacamole and top with fried/scrambled/poached egg (whichever method you prefer!)
*Note: you will have leftover sweet potato slices. These can be placed in a Ziploc bag and easily used for your quick breakfasts during the week!
