We All Scream For Ice Cream

Few things scream “summer” more than a creamy, melty scoop of ice cream atop a crunchy sugar cone. But sometimes, the nutrition facts attached to those treats limit how often we allow ourselves to indulge. Luckily, it’s pretty easy to combine some much healthier ingredients with names you can pronounce to create a similarly creamy and indulgent dessert. Here are a couple of frozen yogurt, sorbet recipes that will satisfy that sweet craving — without all the guilt!

Strawberry Ice Cream

Simple Strawberry Sorbet (Vegan)

Ingredients

1 pound (16 ounces) frozen strawberries
1 (14-ounce) can coconut milk
1/4 teaspoon liquid Stevia
1 1/2 teaspoons lemon juice

Preparation

  1. Combine all ingredients in a strong blender or food processor and mix just until smooth.
  2. Transfer to a plastic container and place in freezer for 30 minutes.
  3. Churn the mixture with a sturdy whisk or fork, breaking up any ice crystals or frozen bits; return it to the freezer for another half-hour. Repeat until it firms up (about 3 hours altogether).

Peach Ice Cream

Honey Peach Frozen Yogurt
Makes about 1 quart

Ingredients

3-4 cups frozen peaches
¼ cup honey
2 ½ cups Fage Greek yogurt

Method
With a blender puree peaches. Add, honey and yogurt and puree more.. Pour contents into ice cream maker and turn on for 25 to 30 minutes, until mixture is stiff and bunching into the blades. *If you don’t have an ice cream maker, you can transfer the pureed mixture to a plastic container and freeze about 2 hours.

    I always thought I wasn’t a fan of coconut milk, but thanks to Emily’s persistence to try. I LOVE THE STRAWBERRY ONE!

    I haven’t developed a taste for Greek yogurt, but the rest of this is sure looking good enough to try. Maybe this will turn out to be my one use for Greek yogurt?
