What’s For Dinner Tonight?

Need a healthy dinner idea that the family will love? Look no further! My family requests this meal every week. Try it tonight; you will not be disappointed. So delicious and good for you too.

Chicken Basil Meatballs

Servings: 4 / Serving Size: 6 meatballs
(Calories 194, Fat 10.2g, Protein 16.8g, Carbs 9.2g, Fiber .7g)

2/3 cup panko breadcrumbs
1/3 cup coconut flakes
1⁄4 cup chopped green onions
1⁄4 cup chopped fresh basil
2 Tbsp sweet chili sauce
2 tsp minced garlic
1 1⁄2 tsp fish sauce
1 1⁄2 pounds ground chicken
2 egg whites

1⁄4 cup soy sauce
2 Tbsp chopped basil
1 Tbsp chopped green onions 2 Tbsp orange juice
1 Tbsp lemon juice
1 1⁄2 tsp water
1 1⁄2 tsp rice vinegar
Dash of crushed red pepper

Heat oven to 425*. Combine all meatball ingredients in a bowl and mix well. Form into meatballs and place in a non-stick skillet coated with cooking spray; heated at medium-high heat. Cook 6 minutes; browning all sides. Transfer to a baking sheet coated with cooking spray and bake for 7 minutes or until done.

To make sauce: combine all ingredients in a small bowl and serve with meatballs.
